These steak tacos are one of my most requested meals. I get it. What’s not to love: spicy jalapenos and lime, lots of garlic, fresh cilantro, queso fresco, homemade pickled red onions…? They’re delish.
I’ll run out to the grill all year round to make these tacos (as long as it’s not raining). They’re definitely worth throwing my boots on and running out in the snow to the grill. Fortunately, this weekend we had some beautiful Spring weather and the sun was shining because there were tons of tacos to be cooked.
1.5lbs flank steak
2 limes, juiced; 1 lime, zested
1/2 orange, juiced
2 Tbsp EVOO
5 cloves garlic, minced
1 jalapeno, sliced
1/4 cup cilantro, chopped
1 tsp cumin
3/4 tsp salt
1/2 tsp pepper
For Topping: pickled red onions, queso fresco, chopped cilantro, avocado, sour cream
HOW TO DO IT:
Combine lime juice, zest, orange juice, EVOO, garlic, jalapeno, cilantro, cumin, salt, and pepper. Pour over steak in large plastic bag or glass dish. Marinate for at least 1 hour or up to overnight.
Heat grill to medium high heat. Cook for 7 mins per side for medium done steak. Let rest for 5 mins.
Cut in thin slices or 1/2″ cubes. Layer in taco shells. Top with favorite toppings.
