Every day for about forever now I’ve been grabbing a yogurt on my way out the door and eating that at work for breakfast. Getting to work at 6am doesn’t always make breakfast the most convenient meal of the day for me. But I’ve eaten so much yogurt at this point, I just can’t anymore! In come these protein pancakes and they are delightful – a much needed change.
1/2 cup oats
1/2 cup greek yogurt
2 scoops protein powder
1/4 tsp lemon zest
2 Tbsp lemon juice
1/2 cup blueberries
HOW TO DO IT:
In a blender or food processor (I used my immersion blender) combine all ingredients except blueberries. Blend well.
Add blueberries to mix and gently fold in by hand.
Spray a large skillet with cooking spray and heat over medium low heat. Pour mix into skillet in desired size and cook for 3-4 mins per side. Flip when bubbles start to form on the top.
Top with extra blueberries, syrup, or whatever makes you happy.
