Cauliflower, in my opinion is one of the most underrated vegetables. It has a great texture, it’s easy to cook, it picks up flavors really well… I had to try making cauliflower bread. I mean, finally!
1 large head cauliflower
2 cloves garlic
1 tsp salt
1/2 tsp pepper
1/2 tsp paprika
1/2 tsp oregano
1/2 cup parmesan, shredded
1/2 cups mozzarella, shredded
HOW TO DO IT:
Preheat oven to 425 degrees.
Grate cauliflower and drain excess water using a thin towel. Combine with all ingredients eggs through parmesan.
Line a baking sheet with foil. Spread cauliflower mixture on baking sheet and form an even layer. Bake for 25 mins.
Remove from oven. Top with mozzarella and return to oven for another 5-7 mins.
Top with chopped parsley and serve with marinara.
