Featured Recipe: Beef Stew

So I was really sick last week which means there wasn’t a lot going on in my kitchen.  But when I finally started feeling like eating again, food was all I could think about.  I put my big fluffy robe on and raided the fridge.  I love this recipe because I could pretty much scrounge through the fridge and pantry and work with what I already had instead of dragging my sick butt to the grocery store.  This time around, I used the slow cooker, but have cooked this on the stove top in the past and have had equally delicious results.

INGREDIENTS:

1.5lbs beef, cut in large chunks

1lbs yellow or red potatoes

1 yellow onion, chopped

1lbs carrots, sliced

1 cup corn

1 cup peas

6 cloves garlic, crushed

2 cups beef broth

1 cup red wine

2 Tbsp balsamic vinegar

1 Tbsp sugar

1 tsp kosher salt

1/2 tsp black pepper

1 tsp thyme

1-2 bay leaves

2 tbsp corn starch

HOW TO DO IT:

Add beef, corn starch, salt & pepper to slow cooker and mix, making sure beef is well coated.  Add broth, wine, balsamic, thyme, bay leaves, potatoes, carrots, onions, and garlic and cook on low for 6 hours.  Add corn and peas and continue cooking for another 30 – 60 mins.  Super easy!
