Homemade Dressings

I went out to eat the other day and ordered a salad (topped with tons of steak).  What I thought was going to be awesome, turned out to be not so awesome all because of the salad dressing.  You could taste all the sugar and preservatives.  So I thought I’d post some of my go-to dressings.  They are so quick and easy and taste soooo much better than store bought.

Balsamic Vinaigrette:

1/4 cup balsamic vinegar

1/2 cup EVOO

1 clove garlic, pressed

1 Tbsp dijon mustard

1 tsp dried oregano

Kosher salt/Pepper to taste

Combine vinegar, garlic, mustard, oregano, and S/P.  Slowly whisk in EVOO until well combined.

 

Honey Mustard Vinaigrette:

2 Tbsp white wine vinegar

1 Tbsp dijon mustard

2 tsp honey

1/3 cup EVOO

1 clove garlic, pressed

1/8 tsp kosher salt

Combine vinegar, mustard, honey, garlic, and salt.  Slowly whisk in EVOO.

 

Creamy Avocado Lime Dressing:

1 avocado, diced

1/2 cup plain Greek yogurt

1 lime, juiced

1/2 cup fresh cilantro

2 Tbsp EVOO

1 clove garlic, minced

1 tsp cumin

1/2 tsp salt

In food processor (or I like my hand held blender), blend avocado, yogurt, lime juice, garlic, cumin, and salt.  Once smooth, add cilantro and pulse until finely chopped.  Add EVOO and blend well.

Buttermilk Ranch Dressing:

1/2 cup organic buttermilk

1/2 cup organic sour cream

1/4 cup mayonnaise

1 clove garlic, pressed

1/4 cup chives, finely chopped

2 Tbsp fresh dill

1 tsp salt

1/4 tsp pepper

1/8 tsp Tabasco (optional)

In medium bowl combine all ingredients, stirring well.  Refrigerate until ready to serve.

 

Asian Peanut Dressing: 

2 Tbsp low sodium soy sauce

2 Tbsp creamy peanut butter

2 limes juiced

1 Tbsp honey

1 Tbsp rice vinegar

1 Tbsp ginger, peeled and chopped

1 clove garlic, minced

1/4 cup fresh cilantro

dash of cayenne

Combine all ingredients in a food processor and voila.
